Potato Power

Let’s talk comfort food.  First of all, this German girl has no clue what the phrase “leftover mashed potatoes” even means — I suggest you simply whip up some spuds from scratch.  And on a far deeper level, if potatoes, cheese, and Panko crumbs do not say “WINNING” to you, how did we become friends?

    My Mom made potato cakes. I learned from her. My girls learned from me. NOW… I have learned something different and delicious from my fabulous niece !

    Mom used to make potato patties or potato soup when we had leftover mashed potatoes; I loved both options. IF I have leftover mashed potatoes (unlikely) I try the potato patty thing. Sometimes they come out great….other times, not so much. There is a little magic involved 🙂

      I looked all my life for somebody who knew how to make potato cakes like my mom’s. First time we had breakfast out after moving here, SHAZAM! there they were! The Roost won my heart forever with that coup. ❤
